Choco Coffee Mountain Shaved Ice Recipe

For this recipe, you're going to want to brew about two to three cups of coffee with coconut water. Coconut water is mildly sweet and will be undetectable in your coffee machine after a couple of uses.

Add and mix in chocolate syrup until it dissolves in the hot coffee. When it comes to room temperature, freeze this coffee in the containers for your ice shaver.

After you shave the ice, top this sweet, chocolaty coffee treat with chocolate syrup, thin sliced candied almonds, crumbled white chocolate Oreo Hershey's, thin sliced banana and a dollop of whip cream on top. While we're at it, try adding some all natural, unsalted peanut butter in there someplace.

Nobody ever thunk it, but there it is, shaved ice taken to the next level. The next two aren't quite as complicated, but nevertheless, classics that you and your kids will love!

Sweet Milk and Fruit Medley Shaved Ice Recipe

This recipe takes me back to my childhood. I remember the fruit medley cups from my lunchbox in pre-school and then in every school cafeteria from elementary school and on. LOL, fruit medley was one of the only things besides pizza and chocolate milk that I'd eat or drink from those cafeterias. Ahhhh, the memories.

Obviously, we'll need the shaved ice machine and our pre-frozen blocks of coconut water.

Once the ice is all shaved up, drizzle some sweet condensed milk over the top, and top it with canned fruit medley. And, how about some extra condensed milk for good measure?

Red Bean and Ice - Shaved Ice Recipe

In addition to consuming lots of shaved ice while I lived in Hawaii, my childhood consisted of many trips to "J-town," as my family would call it, or Little Tokyo, in Los Angeles. From the time I was a little kid, I can remember the hole in the wall restaurant, with a little street food booth in the front, that serves red bean ice. I'm on the cusp of my 31st birthday and still go to the same place, today.

I love this recipe, and it's a cultural treat, so I though I would share it.

You're gonna want the warm red beans, that are nice and sweet, with all the juices reduced down. You can buy these beans already prepared at any Japanese market. Serve the warm red beans in a small bowl or cup and cover them with a layer of shaved ice about one inch thick and drizzle the top with sweet condensed milk.

Ahh, so simple, but so good. This one is actually pretty healthy because, not only do you have the coco water, you have all the nutrients from the red beans as well.

Ginataang Manok

Coconut

Ingredients:

Cooking With Coconut Milk - Filipino Ginataang Manok and Bicol Express Recipes

1/2 kilo Chicken meat (any part)
1 red bell pepper
1 bundle spinach
1 medium ginger chopped
1 onion
5 garlic cloves chopped
1 can coconut milk
salt and pepper to taste

Cooking Procedure:

  • In a frying pan, fry chicken meat until golden brown.
  • Saute onion, garlic and ginger.
  • Add the chicken meat and mix.
  • Add red bell pepper
  • Add coconut milk and simmer until chicken is tender.
  • When chicken meat is tender, add the spinach. Salt and pepper to taste.
  • Simmer for few minutes and serve.

Enjoy your Ginataang Manok.

Bicol Express

Ingredients:

1/2 kilo pork meat
1 can coconut milk
2 siling labuyo chopped
1 thumb size ginger diced
5 cloves garlic chopped
1 onion chopped
2 tbsp. shrimp paste
1/4 cup water

Cooking Procedure:

  • Saute onion, garlic and ginger.
  • Add pork meat saute until outer part turns light brown.
  • Add some water. Bring to boil.
  • Add the coconut milk simmer until pork is tender and thicken the sauce.
  • Add shrimp paste and chili peppers. Simmer for few minutes.
  • Serve hot.

Filipino Recipes - Yema - Pinoy Food

Yema is a sweet creation that you can serve as a dessert or snack. If you have a sweet tooth, then yema is something that you should try.
Ingredients:

  • 2 cups powdered full cream milk
  • 1-1/2 cups sweetened condensed milk
  • 1 tbsp. butter (softened)
  • 1 50-gram pack coconut cream powder
  • 1 cup white sugar
  • 1 egg yolk
  • small paper cups (1-inch diameter for the bottom)
Cooking Instructions:
  • Place a small saucepan on the stove set to medium heat. Pour the condensed milk and heat gently. Avoid bringing the milk to a boil.
  • In a medium-sized bowl, beat the egg yolk and pour in half of the heated condensed milk. Stir well until mixed thoroughly. Add the coconut cream and mix until you get a smooth mixture. Pour this mixture into the saucepan and go on cooking. To prevent scorching, stir constantly and scrape the bottom and sides of the saucepan. Turn off the heat when the mixture begins to thicken. Set aside for 5 minutes to cool.
  • In a large mixing bowl, put the powdered milk, the egg-milk-coconut cream mix and the softened butter. Blend well until you have a smooth mixture. Use cling wrap to cover the mixture and chill inside the refrigerator for about 45 minutes. Mixture will thicken after chilling, thus, making it easier to shape into balls.
  • Put the white sugar in a shallow bowl.
  • Form the mixture into balls using two teaspoons. They will look irregular at this point. Drop the balls onto the white sugar and roll it gently to coat the entire ball. Roll the sugar-coated balls gently using your hands. When you are satisfied with the shape, drop the ball into a paper cup. Repeat the same process until you finish shaping the remaining mixture.
  • Chill the yema balls then serve.

Filipino Recipes - Suman Moron (Dessert) Recipe - Pinoy Food

Suman Moron originated from Leyte, an island in the Visayas. It is a popular Filipino dessert served during fiestas and other special occasions. Luckily, I don't have to wait for any special celebrations to taste this delicacy because these are commonly sold outside the church during Sundays.

This recipe makes about 30 pieces of Suman Moron 4-inches long each.

\"coconut Milk\"

Ingredients:

  • 2 cups glutinous rice flour
  • 6 cups ordinary rice flour
  • 2 kilos grated coconut meat
  • 1 big can evaporated milk
  • ½ kilo white (refined) granulated sugar
  • 1 kilo muscovado sugar
  • 30 chocolate tableya, melted with 1/4 cup water
  • 1 bar cheddar cheese (julienned)
  • 1 cup chopped peanuts
  • 1 small bottle vanilla extract
  • 8 cups boiling water
  • about 30 pieces banana leaves, cut into rectangles (8″x10″)

Cooking Instructions:

  • In a basin, place the grated coconut meat and pour boiling water. Set aside. (Note: 8 cups of canned coconut milk can be used as alternative.)
  • Mix the 2 types of flour well until thoroughly incorporated. Divide the flour mixture equally into two parts.
  • Squeeze the grated meat when the coconut mixture is already cool enough to handle. Use a fine strainer to separate the coconut milk. Divide the coconut milk equally into two parts.
  • In a thick-bottomed pan, place ½ of the flour mixture and pour in one part coconut milk, muscovado sugar, melted chocolate, vanilla extract and peanuts. Mix well and place over medium heat. Keep on stirring while cooking the mixture. At first, uneven lumps will form. But as you keep stirring, the mixture will even out as it thickens. Turn off the heat when oil starts to come out. Set aside to cool.
  • To the second half of flour mixture, add the remaining coconut milk. Then pour about half of the white sugar and the evaporated milk. Mix thoroughly. Place in a separate pan and cook over medium heat while stirring continuously. Remove from the heat when the mixture is thickened. Set aside to cool.
  • Pass the banana leaves over the heat to make them supple. Then use the squeezed-dry coconut meat over the leaves.
  • Take a heaping tablespoonful of the first mixture (chocolate) and place on the banana leaf wrapper. Sprinkle a little cheese on it before rolling, with the banana leaf covering the mixture. Therefore, you hands won't be touching the mixture being rolled.
  • Take another heaping tablespoonful of the second mixture (milk) and do the same process.
  • Place the two cylinders (milk and chocolate) and roll to form a thicker cylinder with the two colors fused together.
  • Roll the banana leaf to wrap tightly and tie a string at both ends to secure.
  • Repeat the process until all of the two mixtures have been wrapped.
  • Steam for about 45 minutes to 1 hour.
  • Let cool before serving.

Blender Strawberry

This recipe requires 1 tablespoon of lemon juice, 1 tablespoon of grated lemon peel, 1 10-ounce package of frozen strawberries (thawed), 1 can of whipped, heavy cream and two-thirds of a cup of sweetened and condensed coconut milk. Put the strawberries, lemon juice and lemon peel into your Ninja Blender 1100. Blend at high speed for 20 seconds or until it gets smooth. Turn down the speed to low and remove the blender's cover. Add the condensed milk in a regular stream into this mixture. Finally, remove the strawberry mixture by folding it onto whipped cream. To make into hard ice cream, allow it to sit in the freezer for 4 hours.

Low-calorie Version

The Ninja Blender 1100 is also ideal for making this low-calorie version. For this recipe, you only need a third of a cup of non-fat dry milk, one-third of a cup of water, 2 packages of artificial sweetener, half a teaspoon of vanilla and 12 frozen strawberries. All ingredients may be added at the same time into the blender, and you should simply blend them together until the mixture becomes smooth. While you can serve this immediately, you may also place this into the freezer for about 4 hours if you want it to become hard ice cream. This recipe serves 2 people.

In addition, fruit juices contain high levels of vitamins and nutrients that help to replace the body's energy and expel alcohol toxins from the body faster.

Honey is a concentrated form of fructose, so eating crackers and honey helps too. Another way to take honey is to have it with lemon and hot water. This is the classic drink for hangover cure. Not only does a hot honey lemon drink replenishes the body's lost fluids, it also prevents the rapid change in alcohol levels that causes headaches.

Alcohol dehydrates the body, so drinking lots of water before going to sleep and after waking in the morning helps relieve the discomfort that alcohol dehydration causes. Replenish the water supply in your body.

Usually used as a remedy for seasickness, ginger works for hangovers too since having a hangover is rather similar to being seasick. If you are able, brew some ginger tea by cutting about 10 slices of fresh ginger and brew it with 4 cups of water to boil for 10 minutes. After 10 minutes, drain and add half a cup of honey, juice of half a lemon and juice of an orange to the ginger tea for a delicious hangover cure.

So these are some effective hangover cures you can try but there are many more recipes for hangovers, some of which are more myth than fact. Some will actually give you temporary hangover relief before the hangover gets worse.

These include drinking more alcohol in the morning, eating burnt toast and drinking black coffee.

Drinking more alcohol would burden your body with even more alcohol toxins when your body is already struggling to get rid of the toxins from the night before. Burnt toast is supposed to act as a carbon filter that absorbs toxins since carbon is used to treat alcohol poisoning. Carbon on burnt toast is not the same as the carbon used to treat alcohol poisoning. Coffee like alcohol is also a diuretic and causes the body to lose even more water and become even more dehydrated.

At the end of the day, moderation in drinking is still key for reducing hangover symptoms since hangover cures may not work for some people.

Having kids is not an easy job. Daily tasks can sometimes seem so overwhelming. Having five kids of my own, I can completely relate with the day to day frustrations. Fortunately, I do not have any teenagers, yet. With five kids, meal time can be quite chaotic. But how much harder is it, when you must have gluten free recipes for kids as well?

Let's face it. American kids live off of pizza, hamburgers, macaroni and cheese, chicken nuggets, hot dogs, and the list of junk goes on and on. All of this garbage food is making obesity in children a norm. Not only that, but it is all full of gluten. With children that are on a gluten-free diet, it makes it very challenging to cook for them. Despite these challenges, there are actually a lot of options out there that are great gluten-free recipes for kids.

Let's begin with fruit as a snack. Fruit is naturally sweet and vitamin packed, unlike all of the foods listed above. What about a smoothie? Smoothies are extremely tasty, with the natural fruit sugar, and are very filling. Making that smoothie dairy-free, gluten-free, and all natural ensures that all food allergies are addressed and health is taken into consideration. Smoothies are very easy to make and will leave kids asking for more. When I make smoothies, it seems there is never enough to go around.

What ingredients make a great smoothie? The ingredients all depend on your kids' personal preference. We love to combine peaches, strawberries, blackberries, and freshly squeezed orange juice. Some days, I am too lazy to juice oranges and will just exchange coconut milk for the juice. Other days, I do not want to add blackberries. And just recently, I decided to use coconut milk, a very small portion of a banana, and strawberries together. You can't go wrong with smoothies. All you need is some fruit, a blender, and an ability to experiment!

For lunch, a chicken nugget recipe does not need to be thrown out the window. Just use common sense and make them all natural. They are easy to make and taste great. All you need is cubed chicken, eggs, a gluten-free flour blend, paprika, and pepper. Dip the chicken in the eggs and the flour. Place them on a pan and sprinkle paprika and pepper. They take a very short time to bake. Once they are done, the kids are scrambling to the table to get as many as possible.

For dinner, spaghetti is one of the many gluten-free recipes for kids. When making spaghetti, simply buy gluten-free pasta. I have a favorite brand that I use all of the time, which has a good flavor and texture. Then, I make my own homemade spaghetti sauce. All I use is tomato puree, oregano, basil, salt, and pepper. Throw that in with some hamburger, and dinner is served.

I have a harder time making dessert. I have some gluten-free dessert recipes that are good, but I struggle with getting the texture of the dessert just right (it can be a little dry). I have figured out how to make a good gluten-free, dairy-free, banana cream pie filling and pie crust. The texture is good and the flavor leaves you craving more. Filipino Recipes - Arroz Valenciana (Rice & Meat) Recipe - Pinoy Food

Being the staple food of Filipinos, rice is cooked several ways and Arroz Valenciana is just one of the most favored because you don't have to think of any other dishes to pair it with. It is rice and mixed meats mold into one dish. It is a special rice recipe commonly served during fiestas.

Ingredients:

  • 1 young chicken (cut into regular pieces)
  • 1/2 kilo pork (cut into regular pieces)
  • 2 pcs Chorizo de Bilbao (sliced)
  • 6 potatoes (quartered)
  • 1/2 cup shortening
  • 2 segments garlic (macerated)
  • 1 onion (sliced)
  • 1 cup tomatoes
  • 1 cup sweet peas
  • 1/4 cup olives
  • 3 cups rice (boiled in 2 cups coconut milk and 3 cups water)
  • 1 tsp salt
  • Slices of hard-boiled eggs
  • Slices of sweet red pepper
  • Salt, pepper and paprika (to taste)

Cooking Instructions:

  • Season chicken and pork meat with salt and pepper. Fry until color is slightly brown.
  • In a deep pan, saute the garlic, onions and tomatoes. Then add the potatoes, chicken, pork, and chorizos. Mix well then cover the pan and allow to cook until the potatoes and meat are tender. Add water if needed.
  • Add the sweet pepper, sweet peas and olives. Take out some of the stock from the pan and set aside when the vegetables and meat are done.
  • Add the cooked rice to the meat mixture and mix thoroughly with a wooden spoon until well blended. Add the remaining stock and seasoning to taste. Cook on low heat until the mixture becomes quite dry.
  • Garnish top with sliced hard-boiled eggs, stuffed olives and red pepper slices.

1/2 kilo Chicken meat (any part)
1 red bell pepper
1 bundle spinach

1 onion
5 garlic cloves chopped

Cooking Procedure:

  • In a frying pan, fry chicken meat until golden brown.
  • Saute onion, garlic and ginger.
  • Add the chicken meat and mix.
  • Add red bell pepper
  • Add coconut milk and simmer until chicken is tender.
  • When chicken meat is tender, add the spinach. Salt and pepper to taste.
  • Simmer for few minutes and serve.

Bicol Express

Ingredients:

1/2 kilo pork meat
1 can coconut milk
2 siling labuyo chopped
1 thumb size ginger diced
5 cloves garlic chopped
1 onion chopped
2 tbsp. shrimp paste
1/4 cup water

Cooking Procedure:

  • Saute onion, garlic and ginger.
  • Add pork meat saute until outer part turns light brown.
  • Add some water. Bring to boil.
  • Add the coconut milk simmer until pork is tender and thicken the sauce.
  • Add shrimp paste and chili peppers. Simmer for few minutes.
  • Serve hot.

Coconut Chicken Recipes - Easy & Quick To Prepare!

These coconut chicken recipes are quick, easy and delicious. Just check these out and I'm sure you'll be amazingly surprised.

So here we go for some coconut chicken recipes

Coconut

>> Coconut Chicken Curry

1 1/2 tb curry powder>

1 cn coconut milk (about 16 oz) chicken stock or water

1 garlic clove minced

1 green pepper cut in strips

1 md onion chopped

2 tb vegetable oil

4 chicken breasts, boned skinned & cut in 1 dice

4 md potatoes peeled cut in 1 dice

In a large casserole, sauté onion in oil until softened. Add green pepper and garlic and sauté 2 minutes. Add curry powder and sauté 1 minute. Add chicken, potatoes, coconut milk, salt to taste and enough stock or water to cover. Bring to a boil, cover and simmer for 30 minutes or until potatoes are tender.

1 lb chicken breasts without skin cut in 1 pieces vegetable oil

1/4 cup flour

2 cups sweetened coconut flakes

2 eggs

3/4 cup cocktail peanuts finely chopped in food processor (almost ground)

Dipping sauce

1 tbsp soy sauce

1/2 tsp prepared mustard

3 tbsps orange marmalade

3 tbsps honey

1. Combine peanuts and coconut in medium sized bowl. Place flour in a
second bowl and lightly beat eggs in a third bowl.

2. Dip chicken pieces in flour, then egg, and then roll in peanut mixture. Place on a baking sheet.

3. Pour enough oil into skillet to reach a depth of 1/2 in. Heat over medium heat. When hot add chicken with slotted spoon, 6 pieces at a time. Cook 4-6 minutes until cooked through and light golden, turning once. Adjust heat as needed to prevent over browning. Drain on paper towel.

4. To prepare sauce, combine all ingredients in small bowl.
