Try Cherry Snowballs, a classic Christmas treat. You will need:

  • 1 cup butter, softened
  • 1/2 cup confectioners' sugar
  • 1 tablespoon water

To make the cookie, cream the butter, sugar, water and vanilla. Combine the flour, oats and salt and gradually add to the creamed mixture.

Shape about a tablespoon full of dough around a cherry, forming a ball. Place 2 inches apart on an ungreased baking sheet. Bake at 350 degrees F. for about 18-20 minutes or until bottoms are lightly browned. Remove to a wire rack to cool.

While cookies cool, make the coating by combining the sugar, and milk to achieve a smooth dipping consistency. Dip cookies and roll in the chopped coconut. Let set and finish cooling. Makes about 36 cookies.

Line a 9 by 5 by 3 inch loaf pan with waxed paper and set aside.

Divide the dough into thirds. Add almond extract and red food color to one portion, spread evenly into the prepared pan.

Add coconut to the second portion and spread evenly over the third layer.

Add the chocolate syrup to the third portion and spread over the second layer.

Cover with foil and freeze for 4 hours or overnight.

Preheat the oven to 350 degrees F. You will also need ungreased cookie sheets or sheets lined with parchment paper.

Unwrap the loaf and cut in half lengthwise. Cut each portion across the width into 1/4 inch slices. Place 2 inches apart on a baking sheet and bake for 12 - 14 minutes or until the edges are lightly browned. Remove to wire racks to cool.

In a microwave, melt chocolate chips and shortening. Stir until blended and smooth. Dip one end of each cooled cookie into chocolate and place on wire racks set over wax paper(to catch drips).

Recipe makes about 5 dozen cookies. Store in a single layer between sheets of wax paper in an air-tight container.

For all you caramel lovers, here is one for you. Caramel Coconut Heavenly Cookies are easy to make and impressive on the Christmas cookie platter. Great cookie to make with kids and be careful, they are addictive.

  • 12 graham crackers (4 3/4 by 2 1/2 inches)
  • 2 cups miniature marshmallows
  • 3/4 cup butter
  • 3/4 cup packed brown sugar

  • 1 cup sliced almonds

Bake at 350 degrees F. for 14 - 16 minutes or until browned. Cool completely and then cut into 2 inch squares. Cut each square in half to form triangles. Makes about 6 dozen. You could also drizzle a ribbon of melted chocolate chips over the top. Try this with butterscotch chips. Yummy.

Here is one more that you surely will want to include the Christmas. They are called Jeweled Coconut Crisps and they will add yet one more layer to your festive table, that is if you can keep them around long enough.

You will need:

  • 1 cup butter,softened
  • 1 cup sugar
  • 2 tablespoons milk
  • 1 1/2 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 3/4 cup finely chopped red and green candied cherries
  • 3/4 cup chopped pecans
  • 1 cup flaked coconut

To make the cookies cream the butter and sugar in a mixing bowl. Bear in the milk and vanilla. Stir in the flour, cherries and pecans.

Shape into two 8 inch logs. Sprinkle coconut onto wax paper, placing each log on the wax paper roll it in the coconut. Wrap each log and refrigerate several hours or until firm.

Preheat oven to 375 degrees F. Cut the cookies from the logs making 1/4 inch slices. Place on ungreased or parchment paper lined baking sheets and bake for 10 - 12 minutes or until the edges are lightly browned.

Cool on wire racks. You may wish to sprinkle warm cookies with a dusting of confectioners' sugar, but this is optional. Makes about 5 dozen cookies.

Coconut pie or buko pie is a traditional Filipino pie. It is filled with strips of tender and young coconut meat. Back in college, my classmate who is also my best friend visited the Philippines with his family and brought back a delicious pie made from coconut. He came home alone because his parent decided to extend their visit and since I'm his best buddy, I picked him up from the airport. When we arrived home, he opened his knapsack and pulled out a little box that is slightly dented and damaged from the cramped space in his bag. I asked him what it was and he said that it is coconut pie from the Philippines. It didn't look that much since the box was dented but when I opened it, I saw a beautiful little brownish white pie that smells so inviting. I took my first bite and my buddy grabbed it and took his. I instantly fell in love with it and wanted it all for myself but my friend didn't gave up that easily.

Two years passed and my friend wanted to visit the Philippines once more so I decided to tag along. We went to Manila and ate all the Filipino food that our bellies can take but something was still missing. Suddenly, all came back and I know what I was craving for... We asked around and was directed to Laguna Province which is about two hours away from Manila. The person we asked said that buko pie or coconut pie is one of the most must-try product and a specialty of Laguna Province. The next morning we were off to Laguna province to the town where buko pie is famous. We didn't come unprepared and have studied some Filipino sentences in hope to get buko pie at a discounted price. We learned from a Filipina lady who we met at the mall to say to the sales lady "magandang araw ale, magkano buko pie, pengi discount ha" (good day miss, how much for a pie, give me a discount). We memorized the sentence but totally forgot about the word "ale" (miss / female) and have constantly repeated the sentence even to guys who were selling the pie. We were able to buy 12 boxes but didn't get a big discount, probably it was because we kept on repeating the word "ale" to the dude where we bought the pies.

I searched around and found this coconut pie recipe and have successfully tried it many times. It took me several tries to come close to the real coconut pie that we bought from Laguna province but practice makes perfect and I'm getting very close to the real thing.

Ingredients:

Crust:

- Two cups all-purpose flour

- One tsp. salt

- 2/3 cup shortening

- One egg yolk

- One tablespoon vinegar

- 1/4 cup water

Filling:

- Four cups strips of coconut meat

- One cup coconut water

- One can (300 ml.) Sweetened Condensed Milk

- 2/3 cup cornstarch

Preparation:

Dough:

- Blend flour and salt in a bowl. Cut in shortening using two knives or with a pastry cutter.

- Combine egg yolk, vinegar and water. Slowly add the liquid to the flour mixing until dough is mixed well and can be handled.

- Divide dough into two parts with one part slightly bigger than the other. Roll bigger dough to about two inches larger than a 16-inch pie plate.

- Fit dough into a pie plate letting sides hang.

- Roll out remaining dough for the crust.

- Set aside.

Filling:

- Combine filling ingredients in a thick saucepan.

- Cook stirring constantly until thickened. Cool then pour into prepared crust.

- Cover with top crust; flute or crimp edges together to seal.

- Bake for an hour at 425 degrees F.

Best served hot but I prefer eating it cold since it reminds me of my good old college days...
